Preparations

Butter: 1 cup of your butter should be cold. Either grate this butter in advance using the large side of a box grater, or cut it into small cubes (1/4 inch big) and hold in the refrigerator. Remaining 1/2 cup of butter should be at room temperature.

Sweet potatoes: Preroast your sweet potatoes: preheat oven to 425F. Wash and scrub potatoes. Wrap in foil and pierce all over with a fork into the flesh of the potatoes. Place on a baking sheet and roast for 1 hour, until squishy. Let cool, then remove foil and peel off skin. Hold flesh in an airtight container in the refrigerator until we begin.

Eggs, & Other Dairy: Eggs and milk should be at room temperature.
