The following is a rough schedule for the day.

9a Pacific/1p Eastern: Make and knead dough.

90 minute rise. 1 hour chill in fridge

12:15p Pacific/3:15 Eastern: Fill and Shape loaf

90 minute rise.

2:30p Pacific/5:30p Eastern: Egg wash and bake.

Shopping List

Ingredients

Instant or Active Dry Yeast, 1 packet (2 1/4 tsp)

Whole Milk (5 fl oz)

Granulated Sugar

Bread Flour (1 lb)

Large Eggs, 5

Kosher Salt or Sea Salt

Unsalted Butter (11 oz)

Semi-sweet or dark chocolate (4 oz)

Cocoa powder, 1/3 cup, preferably dutch-processed, but any kind will work

Powder sugar, 1/2 cup

All-purpose flour for dusting

Equipment

Stand mixer with dough hook strongly preferred, but it is possible to mix by hand.

Parchment paper

Rubber spatula

Loaf pan, standard size

Large baking sheet

Pastry brush

Rolling pin
